- 1 pint of cherry tomatoes halved
- 2 ripe avocados peeled, pitted, and diced
- ⅓ third cup crumbled feta cheese keep half aside for topping
- ¼ quarter cup chopped fresh cilantro or fresh dill
For the Dressing
- 3 tablespoons fresh lemon juice about two small lemons
- 1 tablespoon extra virgin olive oil
- 2 teaspoons honey for a touch of sweetness
- 2 cloves garlic finely minced
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
