Ingredients
  

For the Salad

  • 1 large English cucumber quartered lengthwise and sliced into bite-sized pieces
  • ½ of a small red onion thinly sliced
  • 1 pint of cherry tomatoes halved
  • 2 ripe avocados peeled, pitted, and diced
  • third cup crumbled feta cheese keep half aside for topping
  • ¼ quarter cup chopped fresh cilantro or fresh dill

For the Dressing

  • 3 tablespoons fresh lemon juice about two small lemons
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons honey for a touch of sweetness
  • 2 cloves garlic finely minced
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions
 

Soak the Onion

  • Place the sliced red onion in a small bowl and cover it with cold water. Let it sit for a few minutes. This softens the sharp taste and makes it sweeter.

Mix the Dressing

  • In a small bowl or measuring cup, combine the fresh lemon juice, olive oil, honey, minced garlic, salt, and black pepper. Whisk until the dressing looks smooth and blended.

Combine the Base

  • In a large salad bowl, add the chopped cucumber, halved tomatoes, diced avocado, half of the crumbled feta, and the fresh herbs.

Add the Onion and Dress It Up

  • Drain the onion slices and gently pat them dry. Add them to the salad bowl. Pour the dressing over the salad ingredients and toss everything together with a light hand so the avocado stays intact.

Finish and Serve

  • Sprinkle the remaining feta cheese on top for a pretty final touch. Serve the salad right away while the veggies are crisp and the flavors taste bright.
