  • 4 cups ripe peaches chopped
  • 2 tablespoons fresh lemon juice
  • 1 to 2 tablespoons maple syrup honey, or agave nectar
  • 3 tablespoons chia seeds
  • ½ teaspoon vanilla extract optional
  • ¼ teaspoon ground cinnamon optional
  • ¼ teaspoon grated fresh ginger optional

Method
 

STEP 1: SIMMER
  1. Add the peaches, lemon juice, and sweetener to a medium saucepan over medium heat.
  2. Cook for 5 to 7 minutes, stirring occasionally, until the peaches soften and release their juices.
STEP 2: MASH
  1. Mash the peaches using a potato masher for a chunky texture.
  2. For a smoother jam, blend the mixture with an immersion blender.
STEP 3: THICKEN
  1. Remove the saucepan from the heat.
  2. Stir in the chia seeds and any optional flavor additions.
  3. Allow the mixture to rest for 5 to 10 minutes.
STEP 4: CHILL
  1. Transfer the jam to clean jars or airtight containers.
  2. Refrigerate until fully set before serving.
