  • 3 ripe peaches sliced
  • 8 ounces burrata cheese
  • 4 cups baby arugula or mixed greens
  • 1 cup heirloom tomatoes or cherry tomatoes optional
  • 2 tablespoons toasted pistachios walnuts, or pine nuts
  • Fresh basil leaves
  • Flaky sea salt to taste
  • Freshly cracked black pepper to taste
For the Dressing
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • 1 teaspoon honey
  • 1 teaspoon champagne vinegar
  • 1 teaspoon fresh lemon juice
Optional Maceration Mixture
  • Pinch of sugar
  • Pinch of salt
  • 1 teaspoon champagne vinegar

Method
 

Step 1: Prepare the Peaches
  1. Wash and slice the peaches into wedges.
  2. For extra flavor, place the peaches in a bowl with a pinch of sugar, salt, and champagne vinegar. Toss gently and let sit for 5 minutes.
Step 2: Make the Dressing
  1. Whisk together the olive oil, balsamic glaze, honey, champagne vinegar, and lemon juice in a small bowl until smooth.
Step 3: Build the Base
  1. Arrange the arugula or mixed greens across a large serving platter.
  2. Add the tomatoes if using.
Step 4: Add the Peaches and Burrata
  1. Place the peach slices evenly across the platter.
  2. Tear the burrata into large pieces and distribute over the salad.
Step 5: Finish the Salad
  1. Sprinkle with toasted pistachios and fresh basil.
  2. Season with flaky sea salt and black pepper.
  3. Drizzle the dressing over the top just before serving.
Step 6: Serve
  1. Serve immediately while the greens are fresh and the burrata is creamy.
Notes
