  • cups graham cracker crumbs
  • cup melted butter
  • 3 tbsp sugar
For the Cheesecake Filling
  • 1 lb cream cheese softened
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • cups whipping cream
For the Strawberry Topping
  • 4 cups fresh or frozen strawberries
  • ¾ cup sugar
  • 3 tbsp cornstarch
  • ¼ cup cold water

Method
 

Step 1: Prepare the Crust
  1. Line a 9-inch springform pan with parchment paper.
  2. Mix graham crumbs, melted butter, and sugar.
  3. Press firmly into the bottom of the pan.
  4. Chill while preparing the filling.
Step 2: Make the Filling
  1. Whip cream with a small portion of sugar until stiff peaks form. Set aside.
  2. Beat cream cheese with remaining sugar until smooth.
  3. Add a small amount of whipped cream to loosen the mixture.
  4. Fold in remaining whipped cream gently.
  5. Spread evenly over the crust.
Step 3: Prepare the Strawberry Topping
  1. Combine strawberries and sugar in a saucepan.
  2. Cook until softened.
  3. Add cornstarch mixed with water and stir until thickened.
  4. Let cool completely.
Step 4: Assemble
  1. Pour cooled strawberry topping over cheesecake layer.
  2. Chill for at least 6 hours or overnight.
