Ingredients
  

For the crust
  • 1 ½ cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 2 tablespoons sugar
For the filling
  • 8 oz cream cheese softened
  • ½ cup sugar
  • ¼ cup key lime juice fresh preferred
  • 1 teaspoon lime zest
  • 1 cup heavy cream whipped
Optional toppings
  • Whipped cream
  • Lime slices or zest
  • Extra graham crumbs

Method
 

  1. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  2. Press the mixture evenly into the bottom of serving cups. Chill briefly.
  3. Beat the cream cheese until smooth, then add sugar and mix well.
  4. Add key lime juice and zest, and continue mixing until creamy.
  5. Gently fold in the whipped cream until light and airy.
  6. Spoon or pipe the filling over the crust in each cup.
  7. Refrigerate for at least 2 to 3 hours until set.
  8. Add toppings just before serving and enjoy chilled.
