Ingredients
  

For the Turkey Patties
  • pounds 93% lean ground turkey
  • ½ cup block feta cheese crumbled
  • 2 cloves garlic minced
  • ¼ cup finely chopped red or green onion
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • ½ cup grated zucchini squeezed dry, or chopped baby spinach
  • 1 large egg
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon avocado oil or canola oil for cooking
For the Whipped Feta
  • 8 ounces block feta packed in brine
  • ¼ cup plain Greek yogurt or softened cream cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 garlic clove
For Serving
  • 4 brioche buns whole wheat buns, or pita bread
  • 1 cup arugula
  • 1 Persian cucumber sliced
  • 2 Roma tomatoes sliced
  • ¼ red onion thinly sliced

Method
 

  1. In a large bowl, combine the ground turkey, feta, garlic, onion, parsley, oregano, zucchini or spinach, egg, salt, and black pepper. Mix gently until everything is just combined.
  2. Divide the mixture into four equal portions and shape into patties about ¾ inch thick. Press a shallow indentation into the center of each patty with your thumb.
  3. Place the patties on a parchment lined tray and refrigerate for 20 to 30 minutes.
  4. Make the whipped feta by blending the feta, Greek yogurt, garlic, and lemon juice until smooth. Slowly drizzle in the olive oil while blending until creamy.
  5. Cook the patties using your preferred method:
  6. Skillet: 5 to 6 minutes per side over medium high heat.
  7. Grill: Cook over medium high heat at 400°F until done.
  8. Air Fryer: Cook at 375°F for 10 to 12 minutes, flipping halfway through.
  9. Oven: Bake at 400°F to 425°F for 15 to 18 minutes.
  10. Check that the internal temperature reaches 165°F using an instant read thermometer.
  11. Toast the buns lightly.
  12. Spread whipped feta on both halves of each bun.
  13. Add arugula, the cooked turkey patty, cucumber, tomato, and red onion.
  14. Serve immediately with your favorite side dish.
