Method
- In a large bowl, combine the ground turkey, feta, garlic, onion, parsley, oregano, zucchini or spinach, egg, salt, and black pepper. Mix gently until everything is just combined.
- Divide the mixture into four equal portions and shape into patties about ¾ inch thick. Press a shallow indentation into the center of each patty with your thumb.
- Place the patties on a parchment lined tray and refrigerate for 20 to 30 minutes.
- Make the whipped feta by blending the feta, Greek yogurt, garlic, and lemon juice until smooth. Slowly drizzle in the olive oil while blending until creamy.
- Cook the patties using your preferred method:
- Skillet: 5 to 6 minutes per side over medium high heat.
- Grill: Cook over medium high heat at 400°F until done.
- Air Fryer: Cook at 375°F for 10 to 12 minutes, flipping halfway through.
- Oven: Bake at 400°F to 425°F for 15 to 18 minutes.
- Check that the internal temperature reaches 165°F using an instant read thermometer.
- Toast the buns lightly.
- Spread whipped feta on both halves of each bun.
- Add arugula, the cooked turkey patty, cucumber, tomato, and red onion.
- Serve immediately with your favorite side dish.
