Mediterranean Stuffed Eggplant Recipe

One of my favorite Eggplant Recipes, this Mediterranean stuffed eggplant combines tender baked eggplant, chickpeas, tomatoes, peppers, herbs, and feta.

Ingredients
  

  • 2 medium eggplants
  • 2 tablespoons extra virgin olive oil divided
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 medium red bell pepper diced
  • 2 medium tomatoes diced
  • ½ cup cooked chickpeas
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • Salt to taste
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • cup crumbled feta cheese optional

Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the eggplants in half lengthwise. Score the flesh in a crisscross pattern without cutting through the skin.
  3. Brush the cut sides with 1 tablespoon olive oil and season lightly with salt and black pepper. Place cut side down on the prepared baking sheet.
  4. Bake for 25 to 30 minutes, or until the eggplant flesh is soft and tender.
  5. Meanwhile, heat the remaining olive oil in a skillet over medium heat. Add the onion and cook for 3 to 4 minutes.
  6. Add the garlic and red bell pepper. Cook for another 2 to 3 minutes.
  7. Stir in the tomatoes, chickpeas, cumin, smoked paprika, oregano, salt, and black pepper. Cook for about 5 minutes.
  8. Remove from the heat and stir in the parsley and lemon juice.
  9. Scoop some of the soft flesh from each roasted eggplant half. Chop it and stir it into the vegetable filling.
  10. Fill each eggplant half with the Mediterranean vegetable and chickpea mixture. Sprinkle with feta cheese, if using.
  11. Bake for another 12 to 15 minutes, until the filling is hot and the top is lightly golden.
  12. Rest for 5 minutes before serving. Garnish with fresh parsley and lemon juice if desired

Notes
Choose medium eggplants with smooth, firm skin for the best texture. Avoid using too much oil because eggplant absorbs it quickly.
For a vegan version, omit the feta cheese. You can add cooked quinoa, lentils, brown rice, or extra chickpeas for a heartier filling.
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Reheat until hot throughout before serving.
