Ingredients
  

For the Tofu Layer
  • 600 g refrigerated soft silken tofu
For the Matcha Brown Sugar Arnibal
  • 1 cup water
  • ¾ cup dark brown sugar or muscovado sugar
  • 1 pandan leaf tied into a knot (optional)
  • 2 teaspoons culinary-grade matcha powder sifted
  • 1 teaspoon vanilla extract optional
For the Sago Preparation
  • ½ cup small sago pearls
  • Water for boiling

Method
 

Step 1: Cook the Sago Pearls
  1. Bring a large pot of water to a boil.
  2. Add the sago pearls and stir gently.
  3. Cook until the pearls become mostly translucent.
  4. Turn off the heat and let them rest in the hot water.
  5. Drain and rinse lightly.
  6. Set aside.
Step 2: Make the Matcha Brown Sugar Arnibal
  1. Combine water and brown sugar in a saucepan.
  2. Add the pandan leaf if using.
  3. Simmer until the sugar fully dissolves.
  4. Remove from the heat.
  5. Whisk the sifted matcha with a few spoonfuls of warm syrup until smooth.
  6. Stir the matcha mixture back into the syrup.
Step 3: Warm the Silken Tofu
  1. Carefully transfer the silken tofu to a heat-safe dish.
  2. Steam for about 10 minutes.
  3. Keep warm until serving.
Step 4: Assemble
  1. Spoon warm tofu into serving bowls.
  2. Add a generous amount of sago pearls.
  3. Drizzle with the matcha brown sugar arnibal.
  4. Serve immediately.
Notes
  1. Refrigerated silken tofu gives the best texture.
  2. Sift matcha before mixing to avoid clumps.
  3. Freshly cooked pearls have the best chew.
