Ingredients
  

  • 1 teaspoon olive oil
  • 1 small onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 10.5-ounce can cream of chicken soup
  • 1 10.5-ounce can cream of mushroom soup
  • 1 10-ounce can diced tomatoes with green chiles, such as Rotel
  • 2 cups cooked chicken shredded
  • Salt and pepper to taste
  • 10 corn tortillas
  • 2 cups shredded cheddar cheese

Method
 

  1. Preheat the oven to 350°F (177°C). Lightly coat a 9 x 13-inch baking dish with cooking spray.
  2. Heat the olive oil in a skillet over medium-high heat. Add the diced onion and bell pepper and cook for about 5 minutes, until softened.
  3. Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  4. Combine the cooked vegetables, cream of chicken soup, cream of mushroom soup, diced tomatoes with green chiles, shredded chicken, salt, and pepper. Stir until the filling is evenly combined.
  5. Arrange five corn tortillas across the bottom of the prepared baking dish. Tear or overlap the tortillas as needed to cover the bottom.
  6. Spread half of the creamy chicken mixture over the tortillas, then sprinkle 1 cup of shredded cheddar cheese evenly over the filling.
  7. Repeat with the remaining tortillas, chicken mixture, and final cup of cheddar cheese.
  8. Bake uncovered for about 30 minutes, until the filling is bubbling around the edges and the cheese is completely melted.
  9. Remove from the oven and let the casserole rest for a few minutes before slicing and serving.
