Cookie Cake Base:
  • ¾ cup unsalted butter softened
  • ¾ cup light brown sugar packed
  • ¼ cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup semi-sweet chocolate chunks
  • ½ cup red and white M&Ms
  • ½ cup pink and white heart sprinkles
Buttercream Frosting:
  • 1 ½ cups unsalted butter softened
  • 3 cups powdered sugar
  • 4 tbsp heavy whipping cream
  • 2 tsp vanilla extract
  • Pink gel food coloring few drops

Method
 

  1. Prep the Pan: Preheat oven to 350°F. Grease a 9-inch heart-shaped pan.
  2. Make the Dough: Cream butter and sugars until smooth. Add egg and vanilla. In a separate bowl, whisk dry ingredients and add to wet mixture. Fold in chips, chunks, and M&Ms.
  3. Bake: Press dough into the pan evenly. Top with sprinkles. Bake for 20–22 minutes until edges are lightly golden. Let cool in pan, then transfer to wire rack.
  4. Make Frosting: Beat butter, powdered sugar, cream, and vanilla until smooth. Add pink coloring and mix.
  5. Decorate: Pipe frosting around the edges and add extra sprinkles. Optional: write a message in the center using a fine tip.
