Charcuterie Snack Boxes
  • Makes 2 snack boxes
  • * 2 oz salami sliced
  • * 2 oz lamb salami sliced
  • * 1 oz Asiago cheese sliced
  • * 1 oz Manchego cheese sliced
  • * 1 oz blueberry chèvre goat cheese
  • * 1 oz flatbread bites
  • * 1 oz fig and olive crisps
  • * 1/4 cup raspberries
  • * 1/2 cup strawberries sliced or halved
  • * 1/4 cup blackberries
  • * 1 tablespoon white chocolate chips optional
  • * 1/4 cup coconut roasted almonds
Veggie and Hummus Snack Boxes
  • Makes 2 snack boxes
  • * 1/4 cup roasted beet hummus
  • * 1/4 cup cilantro Greek hummus
  • * 1/2 cup rainbow carrots
  • * 1 oz flatbread bites
  • * 1/2 cup blanched green beans
  • * 1/4 cup radishes thinly sliced
  • * 1/2 cup Persian cucumbers sliced

Method
 

  1. Prepare four divided snack containers: two for the charcuterie snack boxes and two for the veggie and hummus snack boxes.
  2. For the charcuterie boxes, divide the salami, lamb salami, Asiago cheese, Manchego cheese, and blueberry chèvre evenly between two containers.
  3. Divide the raspberries, strawberries, blackberries, and coconut roasted almonds between the two charcuterie boxes. Add the white chocolate chips, if using.
  4. For the veggie and hummus boxes, divide the roasted beet hummus and cilantro Greek hummus between two containers.
  5. Add the rainbow carrots, blanched green beans, sliced radishes, and Persian cucumbers, dividing them evenly between the two veggie boxes.
  6. Divide the flatbread bites and fig and olive crisps between the appropriate snack boxes. For meal prep, keep the crackers separate and add them shortly before serving to help them stay crisp.
  7. Cover the snack boxes and store them in the refrigerator until ready to serve.
  8. Enjoy within 3 to 4 days for the best freshness.
