For the Chicken:
- 4 Halal chicken breasts or thighs boneless and skinless
- 2 tablespoons olive oil
- 4 cloves garlic minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika optional
- 1 tablespoon fresh rosemary chopped
- 1 tablespoon thyme leaves
For the Squash:
- 1 medium butternut squash peeled and cubed
- 2 tablespoons olive oil
- ½ teaspoon oregano
- 1 tablespoon lemon juice or apple cider vinegar Halal substitute
Optional Garnish:
- Fresh parsley or coriander
- Lemon wedges for serving
Step 1: Prepare the Chicken
Pat chicken dry with a paper towel. Place in a bowl and drizzle with olive oil. Add salt, pepper, minced garlic, and herbs. Mix until the chicken is evenly coated.
Step 3: Roast the Squash
Preheat oven to 200°C (400°F). Spread squash cubes on a baking tray lined with parchment paper. Drizzle olive oil, sprinkle salt, oregano, and toss well. Roast for 25–30 minutes until caramelized.
