Ingredients
  

For the Chicken:

  • 4 Halal chicken breasts or thighs boneless and skinless
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon thyme leaves

For the Squash:

  • 1 medium butternut squash peeled and cubed
  • 2 tablespoons olive oil
  • ½ teaspoon oregano
  • 1 tablespoon lemon juice or apple cider vinegar Halal substitute

Optional Garnish:

  • Fresh parsley or coriander
  • Lemon wedges for serving

Instructions
 

Step 1: Prepare the Chicken

  • Pat chicken dry with a paper towel. Place in a bowl and drizzle with olive oil. Add salt, pepper, minced garlic, and herbs. Mix until the chicken is evenly coated.

Step 2: Marinate

  • Cover and refrigerate for 30 minutes to allow flavors to absorb.

Step 3: Roast the Squash

  • Preheat oven to 200°C (400°F). Spread squash cubes on a baking tray lined with parchment paper. Drizzle olive oil, sprinkle salt, oregano, and toss well. Roast for 25–30 minutes until caramelized.

Step 4: Cook the Chicken

  • While squash roasts, heat a skillet over medium heat. Sear chicken on each side for 3–4 minutes until golden. Transfer to the oven and bake for 10–12 minutes until fully cooked.

Step 5: Combine and Serve

  • Arrange roasted squash and chicken on a platter. Garnish with parsley and a squeeze of lemon juice before serving.
