Ingredients
  

Roasted Brussels Sprouts

  • 12 oz Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

Garlic Butter Chicken

  • 1 lb chicken tenderloins or sliced chicken breast/thighs
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt or to taste
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon crushed red pepper flakes optional
  • 5 cloves garlic minced
  • 2 tablespoons fresh lemon juice
  • 4 tablespoons unsalted butter divided

Garnish

  • ¼ cup fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  • Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread cut-side down. Roast for 20 minutes.
  • Season chicken with paprika, salt, and pepper. Slice if thick.
  • In a skillet, heat olive oil on medium. Sear chicken for 3 minutes per side.
  • Lower heat. Add garlic, lemon juice, Italian seasoning, red pepper flakes, and 3 tbsp butter. Stir for 2 minutes until chicken is fully cooked.
  • Add roasted Brussels sprouts and 1 tbsp butter. Toss to coat evenly.
  • Garnish with chopped parsley before serving.
