Roasted Brussels Sprouts
- 12 oz Brussels sprouts trimmed and halved
- 2 tablespoons olive oil
- Salt and black pepper to taste
Garlic Butter Chicken
- 1 lb chicken tenderloins or sliced chicken breast/thighs
- ½ teaspoon smoked paprika
- ¼ teaspoon salt or to taste
- Freshly ground black pepper
- 2 tablespoons olive oil
- ½ teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes optional
- 5 cloves garlic minced
- 2 tablespoons fresh lemon juice
- 4 tablespoons unsalted butter divided
Garnish
- ¼ cup fresh parsley chopped
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread cut-side down. Roast for 20 minutes.
Season chicken with paprika, salt, and pepper. Slice if thick.
In a skillet, heat olive oil on medium. Sear chicken for 3 minutes per side.
Lower heat. Add garlic, lemon juice, Italian seasoning, red pepper flakes, and 3 tbsp butter. Stir for 2 minutes until chicken is fully cooked.
Add roasted Brussels sprouts and 1 tbsp butter. Toss to coat evenly.
Garnish with chopped parsley before serving.
