Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
- Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread cut-side down. Roast for 20 minutes.
- Season chicken with paprika, salt, and pepper. Slice if thick.
- In a skillet, heat olive oil on medium. Sear chicken for 3 minutes per side.
- Lower heat. Add garlic, lemon juice, Italian seasoning, red pepper flakes, and 3 tbsp butter. Stir for 2 minutes until chicken is fully cooked.
- Add roasted Brussels sprouts and 1 tbsp butter. Toss to coat evenly.
- Garnish with chopped parsley before serving.
