Ingredients
  

For the Vanilla Cake
  • 2 ½ cups 300 g cake flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup 170 g unsalted butter, softened
  • 1 ¾ cups 350 g granulated sugar
  • 4 large eggs room temperature
  • 1 tbsp vanilla bean paste
  • 1 cup 240 ml whole milk, room temperature
  • ½ cup 120 g sour cream
  • ½ cup rainbow jimmies optional
For the Buttercream Frosting
  • 1 cup 226 g unsalted butter, softened
  • 4 cups 480 g powdered sugar
  • 2 tbsp heavy cream
  • 2 tsp vanilla extract
For Decoration
  • 2 to 3 cups rainbow nonpareils

Method
 

Step 1: Prepare the Cake
  1. Preheat oven to 350°F (175°C).
  2. Grease and line a 9x13-inch baking pan with parchment paper.
  3. Whisk together cake flour, baking powder, and salt.
Step 2: Mix the Batter
  1. Beat butter and sugar until light and fluffy, about 3 to 5 minutes.
  2. Add eggs one at a time.
  3. Mix in vanilla bean paste.
  4. Alternate adding dry ingredients, milk, and sour cream until combined.
  5. Fold in rainbow jimmies if using.
Step 3: Bake
  1. Pour batter into the prepared pan.
  2. Bake for 28 to 32 minutes.
  3. Cool completely before assembling.
Step 4: Make the Frosting
  1. Beat butter until smooth.
  2. Gradually add powdered sugar.
  3. Mix in cream and vanilla extract.
  4. Continue beating until light and fluffy.
Step 5: Assemble the Dot Cake Cups
  1. Cut cake rounds using a biscuit cutter or the rim of your serving cup.
  2. Place one cake round into each cup.
  3. Add a layer of buttercream frosting.
  4. Add another cake layer if desired.
  5. Frost the top until level with the rim.
Step 6: Create the Sprinkle Coating
  1. Fill a shallow plate with rainbow nonpareils.
  2. Turn the cup upside down.
  3. Press the frosted surface into the sprinkles.
  4. Gently twist and lift.
Step 7: Chill and Serve
  1. Refrigerate for 30 minutes.
  2. Serve chilled or slightly softened at room temperature.
