Ingredients
  

  • ½ green cabbage chopped
  • 1 cup celery diced
  • 1 cup onion diced
  • 1 cup carrots sliced thin (optional for low carb)
  • 2 cloves garlic minced
  • 4 cups vegetable broth or chicken broth low sodium preferred
  • 2 cups diced tomatoes optional
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black or red pepper
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon fresh lemon juice
  • Optional add ins: shredded chicken fresh herbs, coconut cream for creamy version

Instructions
 

  • Add all chopped vegetables to a large pot.
  • Pour in the broth and add garlic, herbs, bay leaf, salt, and pepper.
  • Bring to a gentle boil over medium heat.
  • Reduce heat, cover, and simmer for 20–30 minutes until cabbage is tender.
  • Remove from heat and stir in apple cider vinegar and lemon juice.
  • Taste and adjust seasoning before serving.
