- ½ green cabbage chopped
- 1 cup celery diced
- 1 cup onion diced
- 1 cup carrots sliced thin (optional for low carb)
- 2 cloves garlic minced
- 4 cups vegetable broth or chicken broth low sodium preferred
- 2 cups diced tomatoes optional
- 1 teaspoon dried oregano
- 1 bay leaf
- ½ teaspoon salt or to taste
- ¼ teaspoon black or red pepper
- 1 tablespoon apple cider vinegar
- 1 teaspoon fresh lemon juice
- Optional add ins: shredded chicken fresh herbs, coconut cream for creamy version
Add all chopped vegetables to a large pot.
