Ingredients
  

For the Dressing
  • cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 garlic clove minced
  • 1 teaspoon poppy seeds
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Chicken
  • 2 boneless skinless chicken breasts
  • Half of the prepared dressing
For the Salad
  • 6 cups mixed greens
  • 1 cup fresh blueberries
  • 1 large avocado diced
  • ½ cup crumbled feta cheese
  • cup toasted slivered almonds
  • ¼ cup thinly sliced red onion

Method
 

  1. Whisk together the dressing ingredients until smooth.
  2. Divide the dressing into two portions.
  3. Marinate the chicken in one portion for 20 minutes.
  4. Preheat a grill to medium-high heat.
  5. Grill the chicken for 4 to 6 minutes per side until it reaches 158°F.
  6. Rest the chicken for 5 minutes, then slice against the grain.
  7. Place the greens in a large bowl.
  8. Add the blueberries, avocado, feta cheese, almonds, and red onion.
  9. Top with the sliced chicken.
  10. Drizzle with the reserved dressing.
  11. Serve immediately.
