Ingredients

Cinnamon Apple Filling
  • 3 medium apples peeled, cored, and diced into 1/3-inch pieces
  • 2 tablespoons unsalted butter
  • ⅓ cup light brown sugar packed
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg optional
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water
Cheesecake Filling
  • 8 ounces full-fat cream cheese softened
  • ⅓ cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • ½ cup heavy whipping cream cold
Cinnamon-Sugar Taco Shells
  • 8 small flour tortillas 6-inch size
  • 3 tablespoons unsalted butter melted
  • ½ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • caramel sauce optional, for serving

Equipment

  • 1 Air fryer
  • 1 Medium skillet
  • 1 Electric hand mixer
  • 1 Taco holder or compact foil forms

Method

  1. Melt 2 tablespoons butter in a medium skillet over medium heat. Add the diced apples, brown sugar, 1 teaspoon cinnamon, nutmeg, and lemon juice. Cook for 5 to 7 minutes, stirring occasionally, until the apples are tender but still hold their shape.
  2. Stir the cornstarch and water together until smooth. Add the slurry to the apples and cook for 1 to 2 minutes, until the sauce is glossy and thick. Transfer to a shallow bowl and cool completely.
  3. Beat the softened cream cheese, powdered sugar, and vanilla until completely smooth. Add the cold heavy cream and beat until fluffy with soft-to-medium peaks. Refrigerate while preparing the shells.
  4. Preheat the air fryer to 350°F (175°C), if recommended for your model. Mix the granulated sugar and 2 teaspoons cinnamon in a shallow dish.
  5. Brush both sides of each tortilla lightly with melted butter, then coat both sides with cinnamon sugar. Fold each tortilla gently into a taco shape.
  6. Arrange the folded tortillas in an air-fryer-safe taco holder. If needed, place compact foil forms inside the folds to keep the shells open. Do not overcrowd the basket.
  7. Air fry for 5 to 7 minutes, checking early, until the shells are golden and crisp. Transfer them to a wire rack and cool completely; they will firm as they cool.
  8. Pipe or spoon the chilled cheesecake mixture into each cooled shell. Top with a generous spoonful of the cooled cinnamon apples.
  9. Drizzle with caramel sauce or sprinkle with extra cinnamon, if desired. Serve soon after assembling for the crispest texture.

Notes

  • Use firm apples such as Granny Smith, Honeycrisp, Pink Lady, or Braeburn.
  • Cool the apples and shells completely before adding the cheesecake filling.
  • Store all components separately and assemble just before serving.
  • Canned apple pie filling may be used; chop large slices into small pieces first.
